Turning A New Leaf
Happy 2018 Friends!
I decided about a week ago to share my journey this year publicly. I had gotten out of habit of eating the foods I know work well for my body, I had lost my motivation for training hard and really had become apathetic when it came to fitness and nutrition overall. I haven't been actively coaching for awhile and to be honest, I really miss that part of my own fitness journey. Helping others usually inspires us in our own lives. This was my missing piece.
It is my hope that sharing my story with you all, it will inspire and motivate you to make changes that you need to make in your lives too. I'll be sharing workouts, training tips, nutrition info, recipes and more! Let's do this together.
This first week, my main focus has been FOOD! I had gotten out of the habit of eating frequent, small meals which works really well for MY body. I was maybe eating 2 meals a day and snacking on less than ideal foods (I refuse to call M&Ms "bad"). I wasn't feeling hungry, which is a sign of a slow metabolism. Not to mention, my jeans had gotten a bit harder to button and I knew that I was putting on pounds (though I do not weigh myself) and body fat. Getting into the habit of having foods prepped and ready to eat was my first order of business.

Me too! I have been loving how simple it is to cook with the IP. I do NOT enjoy spending time in the kitchen and the crock pot takes a little too much pre-planning, so this is perfect for me.
Breakfast is up first. I made steel cut oats in my instant pot. I did 1
cup of oats (dry) with 2 1/2 cups of water for 8 minutes and 12 minute release. The consistency was perfect for me but you can see in the linked recipe that there are several options depending on your personal preference. The quantity I made was 4 servings and I pre-portioned them and reheated each day. A little sugar free syrup...YUM!
This is one of my favorite...Isernio's Chicken Breakfast sausage with egg whites and spinach. Super easy!
Brown the sausage, add the egg whites (2-4 cups) and 1/2 a bag of spinach. Again, this also reheats well and makes 4-5 servings. Pre-portion and toss in your lunch box.
Being that it's winter, I'm on a soup kick. This Chicken & Brown rice soup is amazing and super easy. The hardest part is chopping the veggies. I used a ton of veggies, but it will depend on the size of your IP (Mine is 8qt). I also used 2 pounds of frozen chicken and set the IP for 25 minutes on manual and slow release. Leftovers for days.
